Prepare potjie (I used a No 2 pot) by heating oiled pot over hot coals - boil water in the potjie and then discard
Add good quality extra virgin olive oil and heat pot to smoke point. Brown meat in small batches - remove and set aside
Braise onion, carrot and celery until soft. Add mushrooms and braise uncovered for 5 minutes
Add garlic, ginger, whole spices and dried herbs and braise covered for approx 10 min
When the mixture is nice and fragrant, add canned tomatoes and tomato paste and a cup of water and simmer over medium heat, pot covered (approx 20 min)
When sauce is thick and well incorporated, return meat to the pot and continue to simmer for another 45 minutes. Season to taste with salt, pepper and brown sugar
Add potatoes and simmer until they are done. Remove potjie from the coals and leave to stand for 20 minutes
Serve tomato Bredie with rice or pap and a glass of red wine. Delightful
