Preheat your oven to 180°C. Line a baking tray and set aside.
Put a small saucepan of boiling salted water on a high heat.
Add the cashew nuts to the pan of boiling water and boil for 15 minutes.
Strain and run under cold water to cool slightly.
Break the cauliflower into florets and set aside.
Put the flour, oat milk, garlic,cumin, paprika, salt and pepper into a bowl and whisk to a batter.
Pour the panko breadcrumbs into a separate bowl.
Tip the cauliflower into the batter completely coat the florets.
