While they come from the same area of the cow, chuck roast and chuck steak refer to different cuts. Chuck roast is a tough cut of meat that often includes part of the blade bone, and it's cut in a cylindrical or oblong shape in which the grain runs in the same direction as the long side of the meat. However, chuck steaks come from the top blade of the shoulder, which can produce some extremely tender meat if not overcooked. While the chuck roast, which is lower on the chest, is a popular choice for pot roasts, stews, and braised recipes, which give the beef ample time to tenderize completely, the chuck steak has been given less of a chance.

The ingredients needed to make Chuck steak:
  1. Prepare boneless Chuck steak (remove fat)
  2. Make ready onion sliced
  3. Prepare margarine
  4. Prepare garlic salt
  5. Take Apple cider vinegar

Chuck steak is a cut of beef and is part of the sub-prime cut known as the chuck. Braise the steak in the oven. Cover the Dutch oven with a heavy lid and place the steak in the oven. Thought chuck steak was just a meh budget cut of beef?

Steps to make Chuck steak:
  1. In large bowl place: onions, oil, vinegar, & garlic salt. Mix well
  2. Take Chuck steak and cut in portions (not small) about 7 pieces per steak.
  3. Next wrap each portion of steaks with saran wrap and pound both side of the steaks with a mallet. (So when soaked it will become tender after cooked).
  4. Unwrap steak and place in the large bowl of marinade (made in step1). Make sure all of meat is completely covered. If not enough juice add an additional 1/2 cup of oil & vinegar and 1/2 tsp garlic salt. And marinade steak in bowl for 2hrs.
  5. When ready to cook, melt margarine in frying pan that deep, when hot add ingredients in the marinade bowl simmer for about 30 minutes on low until most of the liquid has absorbed. Add more water if liquid absorbs too quickly, the meat should be real tender and almost falling apart when touched.

Cover the Dutch oven with a heavy lid and place the steak in the oven. Thought chuck steak was just a meh budget cut of beef? It's inexpensive for sure, but it's a far cry from the stew meat you think it is. In fact, chuck steak—unbeknownst to many—boasts rich, meaty flavor akin to a ribeye, and can be just as tender. This easy recipe uses a technique known as a "reverse sear" to deliver perfectly cooked, tender chuck steak every time.
