Instructions to make Evergreen Palak Paneer:
First wash spinach & heat the heavy bottom pan for boiling purpose add spinach with water & cover the lid for 5 to 10 minutes.
Off the flame then take a container with chilled water or some ice cubes & keep boiled spinach for few minutes.
Take a mixer jar add spinach & 2 green chillies pieces & some ginger & garlic pieces too with little bit of water grind well for thick puree.
Heat the pan add butter or ghee when it's heated saute paneer cubes/cottage cheese for a minute & keep aside.
In same pan add cumin seeds,bay leaf ginger garlic paste & dry red chillies saute for a minute then add chopped onion cook till onion get soft.
Add red chilli powder mix well then add grinded green puree in it add salt & stir continuously add some water if required depends the thickness of gravy,cook for few minutes in low flame.
When it gives boil add deep-fried cottage cheese/paneer cubes mix well spread some fresh malai or cream or some butter & serve.
