Instructions to make Amritsari Pindi Chole:
Wash Chole Properly, then soak them in water for minimum 10-12 hours.
Chop Green Chillies in slices.
Grind Tomatoes & Onions separately finely into purée in a mixer grinder.
Now take a pressure cooker, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
When smoke starts coming out of cooker, turn off the flame & let the oil cool down a bit.
After some time, again turn on the gas & keep it on medium flame.
Then add Khade masale & 1 Pinch Hing in it & let them sizzle.
When they start sizzling, then add finely grinded onions paste in it with 1 Table Spoon Ginger Paste & roast them till they turn into golden brown in colour.
After 4-5 minutes, when they turn into golden brown in colour, add 2 Table Spoon Chole Masala, 1/2 Teaspoon Anardana Powder, 1/2 Tea Haldi Powder, 1/2 Teaspoon Laal Mirch Powder, 1/2 Teaspoon Jeera Powder, 2 Teaspoon Dhaniya Powder in it & roast them for 3-4 minutes.
After 3-4 minutes, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
After 6-7 minutes, when oil is completely released, add soaked Chana in it & mix them properly.
Now on the other hand, take a pan, add 1 Cup Water in it, keep the gas on high flame & let it boil.
When it starts boiling, add 2 Teaspoon Chai Patti/ Tea Leaves in it & let them boil.
When it’s colour starts changing from brown to black colour, turn off the gas & transfer it through strainer in chole & mix them properly.
Then add some water with 1/4 Teaspoon Baking Powder or Soda in it & let it boil.
When it starts boiling, close the lid & give 6-7 whistles on medium flame.
After 6-7 whistles, turn off the flame & let the pressure cooker depressurise naturally.
Now take a tadka pan, add 1 Table Spoon Desi Ghee in it.
When ghee gets heated up, add sliced green chillies & 1 Pinch Hing in it & let them sizzle
After some time, open the lid & add tadka in it with 1/2 Teaspoon Garam Masala & 1 Teaspoon Roasted Kasuri Methi in it & mix them properly
