  1. Get 1 cup kabuli chhole
  2. Take 1 tea bag
  3. Make ready Pinch eating soda

This Punjabi Chana Masala, also known as Chole Masala, is an authentic North Indian style curry made with white chickpeas, freshly powdered spices, onions, tomatoes and herbs. Punjabi chole is a North Indian Punjabi style chickpea preparation with choicest spices and ingredients. The kabuli chana or chole are boiled along with tea leaves tied in a muslin cloth and then cooked in a delicious onion-tomato and ginger-garlic paste based spicy gravy. Serve Punjabi chole with onion rings as garnishing with kulcha or rice.

Instructions to make Punjabi chhole:
  1. Soak chana or chole overnight. Remove water. Add amla pieces, a pinch of soda & amla pieces. Pressure cook for 6 whistles. Amla pieces & tea bag is used to get dark color.
  2. Heat oil in a pan. Add onion. Saute till it gets golden in color.
  3. In the mixer jar, add tomatoes, green chili, ginger, garlic & cumin seeds. Make paste.
  4. Add this paste to the onion. Saute for 8 to 10 minutes. Add cumin-coriander powder, turmeric powder, red chili powder, Kashmiri red chili powder & chole masala.
  5. Add boiled chole, water, salt & kasoori methi. Cook for 15 minutes. Serve with kulcha, paratha, bhatura, puri, or pulav.
