  19. Get 1 tsp cumin seeds
  20. Make ready 1/2 tsp ajwain
  21. Take (Dry roast these and make a powder)
  22. Take For gravy
  23. Prepare 30 ml Oil
  24. Get 1 pinch turmeric powder
  25. Take 4-5 garlic cloves (pounded)
  26. Prepare as per taste Salt
  27. Take as per taste Black salt
  28. Make ready 1 tbsp prepared masala
  29. Get 1 tbsp coriander powder
  30. Get 1/2 tsp red chili powder
  31. Prepare 1 onion sliced
  32. Get 1 tomato sliced
  33. Make ready 1 inch ginger Julians
  34. Get 2-3 fresh green chillies slit
  35. Take Handful chopped coriander leaves
  36. Get 1/4 tsp garam masala
  37. Get 1/2 tsp desi ghee
  38. Get as required Water of the boiled chole
  39. Get as required You can add amchur also it makes chole a bit tangy

In Hindi language, the word "Masala" means a mixture of spices. Cole is the Indian popular dish. Every Indian have a different-different recipe. This spicy chole masala hummus is a perfect fusion of chole masala (a spicy chickpea curry) and hummus.

Instructions to make Spicy chole:
  1. In a pressure cooker put soaked chickpeas, masala potli and water. Pressure cook for 5-6 Whistles. Switch off. Let it cool. Strain to remove the boiled chickpeas and keep it in a mixing bowl. Do not throw the water it will be used for gravy. - Next for masala, dry roast above-mentioned ingredients and grind it to a powder.
  2. Next in a mixing bowl having chickpeas, add salt, black salt, coriander powder, red chili powder and the prepared masala. Add amchur too. Mix very well. Now add sliced onion, tomato, ginger, fresh green chillies and chopped coriander leaves. Mix these too nicely.
  3. Now take a kadhai. Add oil and heat. Add pounded garlic, a pinch of turmeric and fry till little brownish, then add the mixed chole into the kadhai. Cook for sometime at slow flame. Then add chole water as required and continue on slow flame. As it gets combined nicely. Add little garam masala and mix. - It's done… - Put some ghee, mix and cover for sometime.
  4. Our tasty spicy chole is ready…. - Take it to a serving bowl. Serve with onion, tomato, lemon wedges. It can accompany hot steaming rice/ kulcha/ stuffed kulcha/ roti/ paratha. - I like this so much I eat it as such with some farsan.. - You can also have some green chutney with the combo.

Every Indian have a different-different recipe. This spicy chole masala hummus is a perfect fusion of chole masala (a spicy chickpea curry) and hummus. Its perfectly spiced with tomato, onion, garlic, ginger, serrano peppers, and cilantro. But the magic ingredient is the chole masala seasoning!
