Pindi Chole is a classic dish from the Punjabi repertoire, which is flavoured with a large assortment of spice powders and other ingredients like ginger, garlic, tomatoes and onions, which lend an irresistible flavour and aroma to it.

The ingredients needed to make Pindi Chole:
  1. Take Boiling chole
  2. Prepare 1 cup chole (soaked over night)
  3. Get 2 black cardamom
  4. Get 1 tea bag
  5. Get as per taste Salt
  6. Prepare Masale for chole
  7. Make ready 1 tbsp kashmiri lal mirch powder
  8. Prepare 1 tsp coriander powder
  9. Prepare 1/2 tsp chaat masala
  10. Make ready 1 tsp chole masala
  11. Prepare 1/4-1/2 tsp garam masala
  12. Prepare 1/2 tsp or as per taste black salt
  13. Make ready 1 tsp anar dana (I didn't have)
  14. Get as per taste Salt
  15. Make ready As needed Fresh coriander leaves
  16. Prepare 1 tsp Tamarind pulp
  17. Get Pindi chole tadka
  18. Take 1 tsp oil
  19. Prepare 1-2 tsp ghee
  20. Make ready 1 tsp ajwsin
  21. Make ready 4-5 clove garlic
  22. Take 2 inch long ginger
  23. Take 4-5 green chili
  24. Get 1/2 tsp kashmiri lal mirch

Add the ajwain, ginger, garlic, and green chillies. Stir-fry till the raw smell of the ginger disappears. Add the dry masalas and mix well. Immediately add the cooked chole and mix well.

Instructions to make Pindi Chole:
  1. Soak chole over night then boil them with salt, 2 black cardamom and tea bag. Wait for 3-4 whistle. (It's depends on chole quality) sometimes it take more time so once we can check after 3-4 whistle if still need we can set for more whistle.
  2. Now remove extra water from chole & keep aside that chole water, we may need that later. Transfer chole into kadayi Or cooker (I used same cooker, in which I kept chole for whistle)
  3. Now add add masala from masala section and mix them cook them for 2 minutes (without adding water) and add fresh coriander leaves.
  4. Now add tamarind pulp and mix and cook it for two minutes. If you feel water is needed add chole water which we used for boiling the water.
  5. Now chop the garlic, ginger, green chilli. In pan add oil + ghee add ajwain. Cook it for 30 second.
  6. Now add ginger, garlic then cook for some time, later add green chilli. And cook it for 1-2 minutes.
  7. Now add kashmiri lal mirch powder and give tadka in chole.
  8. Pindi chole us ready to serve, I served with Aloo-kulcha. - Enjoy!!!
