Take 200 gm Kabuli chana- Soaked overnight with pinch of salt

Prepare 1 tsp kasmiri red chili powder
Get 1/2 tsp turmeric powder
Take 1/2 tsp raw mango powder
Make ready 1 tsp chole masala powder
Make ready 2 tbsp curd
Take as required Coriander leaves finely chopped
Get as per taste Salt
Get as required Butter or oil for cooking
Get For Butter Kulche:-
Get 1 cup all-purpose flour
Take 1/2 tsp baking powder
Take 2 tbsp yoghurt
Get 1 tsp sugar
Make ready 2 tbsp ghee
Make ready As required Few Nigella seeds (kalonji)
Prepare As required Few sesame seeds
Prepare as required Butter for frying
Prepare as required Few finely chopped coriander leaves
When oil bubbles start to rise, gently place the kulcha in the pan and cook for a minute. Flip the kulcha and cook the other side till both sides turn crispy and golden brown in colour. Once done, serve hot with Amritsari Chole. Kulcha is a typical Punjabi recipe.
Instructions to make Amritsari Chole Butter Kulcha:
TO MAKE AMRITSARI CHOLE:- In a pressure cooker put soaked chole, whole spices, tea bag, salt, baking soda and water. Pressure cook the chole. Open lid and keep the chole aside. Don't throw away the water.keep it aside.
In a pan heat 3 tbsp oil. Add chopped onion and green chillies, saute till it becomes golden brown. Now add ginger garlic paste saute for a minute and then add chopped tomatoes. Saute for a minute. when tomatoes softened add all spices and mix it well.
Add curd and mix well. Now add boiled chole and chole masala mix it well and cook for 3-4 minutes.
Now add reserved water which had keep it aside.cook for sometimes till the chole gets nicely cooked in the spicy gravy. Switch off the flame. Garnish with fresh fresh coriander leaves and ginger Julienne.
TO MAKE BUTTER KULCHE:- In a mixing bowl add all-purpose flour, salt, sugar, baking powder, Nigella seeds, chopped coriander leaves mix it well and then add yoghurt, ghee and water. Start to knead and make a smooth soft dough. Cover it and let the dough ferment for 2 hrs.
Make small balls of the dough. With rolling pin flatten the dough and make a oval shape small size kulcha. Sprinkle some sesame seeds and rolled it again.
Heat a tawa, place kulcha on tawa. Cover it. Cook one side partly till it's 1/5 cooked. Flip and cook the other side till it's 1/2 cooked.
Apply some butter on both sides of kulcha. Cook them till it gets golden spots.
Serve them hot with prepared chole.
