Make ready For kulcha
Prepare 2.5 cups maida
Make ready 4 tbsp curd
Take 1/2 tsp baking powder
Get 1/4 tsp baking soda
Get 3/4 cup water for kneading or more as required
Get 2 tsp sugar
Get as per taste Salt
Get 2.5 tbsp oil
Take As required Oil for frying
Take as required Extra flour for dusting

Steps to make Chole kulche:
Take the chickpeas (after removing from water) into a pressure cooker and add salt and water. Pressure cook the chickpeas on medium heat till the chickpeas are softened.
Steep 2 black tea bags in 1/2 cup water for at least 4 mins.
Heat oil in a pan. Then add bay leaf, black cardamom and cloves into the oil. Saute them for few seconds.
Now add Onions and saute them till golden brown. Then add tomato puree, salt, green chilli and red Chilli powder and cook them covered for 5 mins.
Then add all the other spices except kasuri methi. Remove tea bags and add black tea to the masala and cook for 5 mins.
After that add kasuri methi, sliced ginger and cooked chickpeas. Add more water if required. Cook covered on medium low heat for about 20 mins.
Add sliced onion and mix well. Remove from heat. Amritsari Chole are ready!
Mix the maida or all-purpose flour, salt, sugar, baking powder and baking soda in a bowl. Make a well in the center. Add the curd, oil and water.
Begin to mix the flour with the liquids first and then start to knead. Make a smooth and soft dough. In the same bowl or pan, cover the dough with a wet kitchen napkin and let the dough ferment for 2 hours.
Make small balls of the dough. Sprinkle some nigella seeds on the ball. Now flatten them and cut into the shape of triangle.
Heat a griddle or a tawa. Place the kulcha on the tawa. Cook one side partly till its 1/4 cooked. Flip and cook the other side till its 1/2 cooked.
Apply ghee or oil on both sides of kulcha whilst cooking. Cook them till it gets golden spots and is evenly cooked. Make all kulchas this way. Serve them hot.
