  8. Prepare 1 tsp Sweet & Sour Vinegar
  9. Make ready 1 tsp Black Peppercorns: Freshly Cracked
  10. Make ready as required Assorted Veggies: Any- Optional
  11. Make ready 1 tbsp Ginger & Garlic- Finely Chopped
  12. Get 1 Onion: Big- Finely Chopped
  13. Get 1 tbsp Green & Red Chillies: Finely Chopped
  14. Prepare 1 tsp Yellow Chilli Powder: Optional
  15. Make ready 1/2 Cup Bellpeppers: Any- Optional
  16. Prepare 1 Egg: Big (Poached)
  17. Prepare 1-2 Eggs: Scrambled
  18. Take 1 tbsp Sweet & Sour Tomato Ketchup
  19. Take 1 tsp White Sesame Seeds: Optional
  20. Prepare 2 tbsps Butter
  21. Prepare 2 tbsps Sesame Oil/Veg Oil
  22. Prepare 1/2 Cup Garnish: Fresh Chives- Cut into thin slices
  23. Prepare 1 tbsp Green Onions/Shallots: Optional- I didn’t use since mine’s over
  1. To prepare the homemade sweet soya sauce: In a saucepan- Add in the 1/4 Cup Dark Soya Sauce & 4 tbsps of Brown Sugar & let it boil & then simmer to cook for about 5-7 mins time until it nicely thickens to a syrup like consistency
  2. For the homemade Balchao Masala Paste or the Shrimps Paste- Refer to the pics down below: Recipe of the same, I’d share in my different recipe exclusively on this- being a bit elaborate one 👍🏻
  3. Cut & Chop, rest all other ingredients & veggies & seasonings/spices/sauces, readily available & handy to start on with the following steps to the rest of the final cooking process
  4. Heat up a frying pan over the medium flame: Add in some oil or butter (any), Break an egg or two to be poached- Sunny-side up…Set aside for sometime
  5. In another pan/wok on the medium flame: Add in the Butter & the Sesame Oil- Goes in the chopped onions, chopped 2G, red/green/yellow bell peppers (optional)- sauté until the raw smell goes off & they become quite softer & reduced in the initial volumes
  6. Now, goes in the vinegar, sweet soya sauce & the ketchups- give it all a nice mix- Then drop down a dollop of the shrimps paste or the Balchao Masala Paste (Homemade) & mix everything well together until nicely combined and well blended
  7. Once done: Turn off the flame & let it sit on the hot oven for the next few mins until, the poached eggs are done & slightly rested…Now, is the good time to dish out the same for the serving
  8. Transfer the fried rice to a serving plate/platter/bowl/tray- Garnish it your own way…Gently & very carefully, drop in the Poached Egg/s to it with its Sunny-side up & intact & we’re good to go with it….
