Make ready 1 cup white chole(kabuli chana) soaked overnight
Make ready 1 tea bag
Get 1 onion chopped finely
Get 1 green chilli finely chopped

Prepare 1/2 cup tomato puree
Get 1/3 tsp turmeric powder
Get 1 tsp amchur powder
Take 1 tsp chaat masala
Get 1 tsp coriander powder
Prepare 1/2 tsp cumin powder
Make ready 1/2 tsp Kashmiri red chilli powder
Make ready 1 tsp crushed Kasoori methi
Take As needed Chole masala
Make ready 1/2 tsp cumin seeds
Make ready 4 black pepper
Prepare 1 brown cardamom
Prepare 3 cloves
Get 1 dry red chilli
Get as per taste Salt
Make ready 2+ 1 Tbsp oil and ghee
Make ready For Kulcha
Get 1 1/2 cup whole wheat flour
Make ready 2 Tbsp curd
Get 1 tsp sugar
Get 1/3 tsp baking soda
Make ready 1 tsp oil
Get as per taste Salt
Take 1/2 cup whey (chana water)
Take As required Wheat flour to roll kulcha
Take as required Butter/oil for kulcha
Make ready as required Nigella seeds
Prepare As needed- Green coriander
Prepare To garnish
Make ready as required Onion salad
Take as needed Pickle
Prepare 2 Green chilli
The soft kulchas taste delicious with the soft spicy chole made with chickpea cooked in a spicy tomato base. I love Street food and especially the chaats. Even though I love street food, I haven't actually indulged in those much. Chole Kulche is one of the main north Indian dish that is loved as a street food.
Steps to make Chole Kulcha:
When pressure cooker cools down,discard the tea bag.
Roughly grind the chole masala ingredients (except cumin seeds) in mortar and pastle. Heat oil and ghee in kadhai. Add cumn seeds and allow to crackle.
Add the semi ground masala and saute on low flame till you get an aroma.
Add chopped onions green chilli and ginger. Saute till onion gets translucent. Add tomato puree. Cook till the masala dries up.
Add 2 Tbsp water and rest other dry masala from turmeric powder to kasoori methi. Saute till oil separates from masala.
Mix the boiled chana with masala. Adjust the salt. Add water, cover and cook for 10 minutes on low flame. - Chole is ready now.
To make kulcha mix all ingredients. Add whey little at a time to make the dough. Use 1 tsp oil on the dough.
Cover the dough with wet kitchen towel and allow to raise (one hour)
After 1 hour again knead the dough. Make 10 balls.
Roll out with pin to make kulcha. Use kalonji (nigella seeds) and chopped coriander or make plain kulcha as you like.
Cook both the sides on medium flame and brush with butter. The wheat flour kulchas are ready.
Serve delicious hot chole kulcha with salad and pickle. - - *Add salt after boiling of chickpeas. The salt arrests the softness of chole. - * Using tea bag - helps in digestion.
Even though I love street food, I haven't actually indulged in those much. Chole Kulche is one of the main north Indian dish that is loved as a street food. How many times have you eaten them in your college canteen or in a " nagar keertan " of Guru Nanak ji ? I can recall the chole's taste that are distributed as a prasad in "Nagar keertan" and always wanted to re-create the same taste at home too. A delicious combination of an all-purpose flour bread tossed in butter along with tangy and spicy chole, chole kulche is one such dish that we Indians just cannot resist.
