Pindi Chole is a classic dish from the Punjabi repertoire, which is flavoured with a large assortment of spice powders and other ingredients like ginger, garlic, tomatoes and onions, which lend an irresistible flavour and aroma to it.

The ingredients needed to make Pindi Chole:
  1. Prepare For Cooking Chole :
  2. Get 1 cup chana
  3. Take 1 inch cinnamon stick
  4. Take 1 bay leaf
  5. Prepare 4 cloves
  6. Take 3 cardamom
  7. Prepare 1/4 tsp Baking soda
  8. Get 1/2 tsp salt
  9. Make ready 2 tsp tea powder
  10. Take 3 cups water
  11. Make ready For masala :
  12. Take 4 tbsp oil
  13. Make ready 1 Bay leaf
  14. Prepare 1 large onion
  15. Take 1 tsp ginger garlic paste
  16. Get 1 chili
  17. Take 3 tsp Chole Masala (Store bought, Everest brand.)
  18. Make ready 2 large tomato
  19. Make ready as per taste salt
  20. Get as required Coriander leaves for garnishing
  21. Prepare For Tadka :
  22. Take 1 tbsp ghee
  23. Make ready 1 green chili
  24. Prepare 1 inch ginger
  25. Prepare 1/4 tsp Kashmiri chili powder

Add the ajwain, ginger, garlic, and green chillies. Stir-fry till the raw smell of the ginger disappears. Add the dry masalas and mix well. Immediately add the cooked chole and mix well.

Instructions to make Pindi Chole:
  1. Wash and soak chana for 8 hours or overnight. Rinse and take it in a pressure cooker with other whole spices, salt and water. I made a potli of tea powder, if tea bags are available you can put it. Pressure cook for 4-5 whistles until chana is cooked well. Remove potli/tea bags and set aside.
  2. In pan heat oil. Add in bay leaf and finely chopped onions and saute until golden. Add ginger garlic paste, slit green chili and saute until raw smell goes away and onions are golden brown.
  3. Add chana masala powder and on low flame saute until aromatic. Add chopped tomatoes and salt, cover and cook until tomatoes are mushy and oil is separated.
  4. Add in cooked chana and mix well. Adjust consistency and salt. Cover and simmer for 10-15 minutes until all the flavors are absorbed well.
  5. In seasoning pan, heat ghee. Add in slit green chili and ginger juliennes, sauté and switch off the flame. Add kashmiri chili powder and mix.
  6. Pour the tempering over the chole along with chopped coriander leaves. Mix well.
  7. Pindi chole is ready to be served with whole wheat kulche. - (see recipe)
