  2. Get 1 cup kabuli chana

Chole Kulche Most famous Indian breakfast food. It is basically a combination of spicy chick peas (Chole) and po. Tea leaves and dry spices give a nice flavor and color to chana. The consistency of the chole curry has to be somewhat between thick to semi-thick.

Steps to make Chole kulcha:
  1. Soak kabuli overnight. Make a potli as mentioned in ingredients list. - Now pressure cooker for 5 whistles.
  2. Make a paste by grinding onions, ginger and garlic. Heat oil and ghee/butter. Saute the paste, add dry spices. Add salt. Add curd. Add water if required. Smash few chanas and add it to the gravy. Add the kabuli chana. Cover and cook for few minutes.
  3. Now to prepare the kulcha dough, take maida, curd, baking powder and salt. Knead the dough and rest it for 45 minutes.
  4. Now take the dough and make medium size balls, roll it thick. Apply kalonji seeds and coriander leaves. Roll it again. On one side apply water and place it on the tawa. When done from the down, turn the kulcha and cook till golden brown. Appy butter and cut in halves and serve with chole, salad and lemon.

Tea leaves and dry spices give a nice flavor and color to chana. The consistency of the chole curry has to be somewhat between thick to semi-thick. A delicious combination of an all-purpose flour bread tossed in butter along with tangy and spicy chole, chole kulche is one such dish that we Indians just cannot resist. It is made with white peas and mixed with simple spices like red chilli powder, salt and chaat masala and topped with some chaat masala gives it all that scrumptious flavour.
