Pindi Chole tastes awesome when cooked on chulha but as we don't have clay stove (chulha) at home we have to compromise a bit on taste and use modern induction / gas stoves. The ingredients needed to make Authentic Pindi Chole:
  1. Prepare 1 cup soaked Kabuli chana,6- hours and drained
  2. Make ready 2 tbsp chana dal, wased and drained
  3. Take 1 Cardamom
  4. Get 1 - small stick of cinnamon
  5. Get 2 - laung
  6. Take 2 tbsp tea powder
  7. Make ready to taste Salt
  8. Get 3 tbsp oil
  9. Take 1 tbsp chopped ginger
  10. Prepare 5 - garlic cloves(paste)
  11. Make ready 1 cup tomato puree
  12. Take 1 cup onion puree
  13. Make ready 1 tbsp coriander powder
  14. Take 1/2 - tbsp garam masala
  15. Take 1 tbsp red chilli powder
  16. Prepare 1 tbsp chole masala
  17. Get 3 tbsp chopped coriander
  18. Get 1 tbsp amchur powder

No onion,garlic,tomatoes, turmeric or Red chili powder are used. The Color is dark brown/black from the dry spices. Pindi Choley is different from Chana masala which is usually made in the traditional onion,ginger, garlic and tomato curry base. Today's recipe of Pindi chole is a classic chana masala recipe from Rawalpindi in Punjab and is stunningly delish thanks to the aromatic Indian spices.

Steps to make Authentic Pindi Chole:
  1. Soaked Kabuli chana and chana dal.
  2. Make a small potli by Cardamom, cinnamon, laving,and tea powder in piece of muslin cloth.
  3. Combine the Kabuli chana,chana dal,potli,salt and water in a pressure cooker, mix well and pressure cook for 5-6 whistles
  4. Discrab the potli and keep a side
  5. Heat oil in a pan,add jeera, ginger, add onion garlic gravy and saute on medium flame for 5-7 minutes.
  6. Add tomatoes puree, mix well.
  7. Add coriander powder, redchilli powder, garam masala powder,chilled powder,salt,rawmangopowd er,and mix well and cook for 2- minutes.
  8. Add Kabuli chana with the water and mix well and cook on a medium flame for 15-20 minutes.the water dried out.
  9. Add the coriander leaves and mix well.
  10. Serve hot.serve with paratha.
  11. Enjoy
