  1. Marinade the chicken with soy sauce, cornflour and 1 Tbsp cooking oil. Let it marinate for 30 minutes.
  2. In a wok, heat 2 Tbsp of cooking oil and add half (1/2 the total amount of) the shallots, garlic and ginger. Fry them until fragrant (10 seconds). Add 1 Tbsp of curry powder and cook it until the oil separates (10 seconds). Add the chicken and fry it until brown all over (5-8 minutes). Remove and set aside.
  3. Add another 2 Tbsp of cooking oil. Add the remaining half of the shallots, garlic and ginger. Fry them until fragrant (10 seconds). Add the curry powder and cook it until the oil separates (10 seconds).
  4. Then add the mushrooms and cook it for 1 minute. Next, add the chicken stock, vinegar and sugar. Bring it to a boil, cover with a lid and cook for 1-2 minutes. Remove the lid, add the thickener and reduce the liquid by 1/3. Season with salt.
  5. Add the chicken to the curry and mix well. Add the spring onions and serve.
