Dorayaki is a sweet that has been loved by all generations for its exquisite combination of Western-style pancakes and the Japanese sweet bean paste. Traditional Japanese confection dorayaki is made of two hand-sized American-style pancakes sandwiched together with a sweet filling, the most popular of which is azuki red beans (anko). However, custard, chestnuts (kuri), and cream (matcha cream, cream with fruits, etc.) are also popular.

  7. Take 1 Tbsp mirin (sweet sake)
  8. Get 1 can Azuki / red bean paste

A classic Japanese confection, Dorayaki is made of honey pancake sandwich with sweet red bean filling. It's wildly popular amongst the children and adult alike in Japan. Dorayaki (どら焼き) is best described as a dessert with red bean filling between two slices of sweet fluffy pancakes. Add sifted flour and baking powder.

Instructions to make Dorayaki (Sweet Bean Pancakes):
  1. Prepare a bowl and add in the egg and sugar. Mix them well then slowly add milk.
  2. Add flour, a pinch of salt, mirin and baking soda and mix them well. (note: dissolve the baking soda in one tsp of hot water before putting it into a bowl)
  3. Heat a pan with one teaspoon of oil. Wipe off excess oil with a paper towel. Then pour in 2 Tbsp of the batter until it is about 8 cm in diameter. When you see many bubbly spots on the surface of the pancake, it is time to flip it around. Cook the other side for a few minutes on low heat. The mixture should make about 12 pancakes.
  4. Put one Tbsp of bean paste on one pancake and cover it with another pancake. Do the same for the rest of the pancakes and you're done! Enjoy Dorayaki with hot green tea :)

When bubbles start to appear, turn over the pancakes and cook briefly on the other side until golden. Crack the room temperature eggs into a bowl and lightly beat with a whisk.
