Zenzai (ぜんざい) is a traditional Japanese dessert soup made with azuki beans. This sweet red bean soup is served hot with mochi (rice cake) or shiratama dango (glutinous rice flour dumplings) inside the soup. Slightly sweet, with a gentle fragrance from the red beans, the dessert soup has the instant magic of warming up one's soul. It's so easy, yet unbelievably delicious!!

The ingredients needed to make Zenzai (Sweet Red Bean Soup) in the Pressure Cooker!:
  1. Prepare 300 grams Dried adzuki beans
  2. Get 700 ml Water for boiling
  3. Take 250 grams Raw cane sugar
  4. Take 1 1/2 tbsp Honey
  5. Take 3 pinch Salt
  6. Prepare 1200 ml Water
  7. Prepare 1 as much (to taste) Cut mochi

In a pressure cooker, add red beans and water. Add rock sugar or regular sugar and mix well. They are also known as Oshiruko or Zenzai in Japanese. In essence, they are all same kind of sweets, however, Zenzai and Oshiruko differ depending on the region; Kansai and Kanto.

Instructions to make Zenzai (Sweet Red Bean Soup) in the Pressure Cooker!:
  1. Rinse the adzuki beans with water to remove any dirt or debris. Drain in a colander.
  2. Put 700 ml water in a pressure cooker and add the adzuki beans.
  3. Without covering, bring to a boil for 4-5 minutes, then drain out the water (the beans are too astringent; draining out the water will remove the astringency).
  4. Completely drain the beans and place in a colander.
  5. Add 1200 ml of water and the beans from Step 4 to the pressure cooker and cover with the lid. Once the pressure rises and the pot starts to steam, reduce the heat to low and cook for 15 minutes. Turn off the heat, then let it sit until the pressure drops.
  6. Once the pressure drops, remove the lid and gradually mix in the sugar in three batches. Next, add the salt and honey, and simmer until the beans become thick (cook the beans until you can crush them between your fingers).
  7. Line a grill with aluminium foil, then quickly grill the mochi and add it to individual servings of zenzai for a delicious touch! The zenzai can be frozen. I recommend dividing it into individual servings before freezing.

They are also known as Oshiruko or Zenzai in Japanese. In essence, they are all same kind of sweets, however, Zenzai and Oshiruko differ depending on the region; Kansai and Kanto. Cover and lock the lid of your pressure cooker. If you're using an Instant Pot, turn it on and press the "Bean/Chili" button. The Japanese zenzai (ぜんざい) is a thick soup almost like a porridge which is served with chewy glutinous rice balls or rice cakes.
